For this summer, we wanted to sunbathe. What's better than a Corsican icecream craftsman to get there? It is therefore with a recipe of the incredible Pierre Géronimi, that we are launching this summer a jam "Strawberry, maracuja and népita".
The strawberry, easy everyone knows. But with the maracuja it gets complicated... It is a fruit of the same family as the fruit of passion, same shape but sweeter. Not a hint of acidity. With small glitches inside that we like to eat. And to finish the népita! But what is it? Well, it is a Corsican aromatic herb, obviously! That we find only on this island, in the maquis. Here we go for two days of intense harvest!
Strawberry, maracuja, unrefined cane sugar, népita (Corsican herb) and natural pectin.
Net weight: 250g / 8.82 oz
Total sugar content: 57%. Prepared with 60g of fruit for 40g of unrefined cane sugar.
SWEET: On a toast, a yogurt or with a chocolate fondant. The small crunchy pips of the maracuja add pep.
SALTY: On a fresh goat cheese.
