Around 1890, the pastry chef Lasne created a delicious almond biscuit. As his shop was close to the Stock Exchange, his clientele was largely composed of financiers eager to swallow a small cake on the go that does not dirty the fingers and can be kept in the pocket. Lasne had the idea to change the oval shape of the original pastry for a rectangle to recall a... gold bar. The financier was born!
Next to the madeleine, the financier is probably the most popular little French cake. The finest have a firm, crusty exterior and a moist, almondy interior, tasting almost as if they were filled with almond paste.

INGREDIENTS TO BE ADDED
¼ cup butter (4 oz)
3 egg whites
Icing sugar*, almond meal*, T65 wheat flour*, Ré Island salt.
Produced in a factory that uses nuts and sesame.
INSTRUCTION OF USE
1- Pour the baking mix into a large bowl
2- Add the melted butter and the egg whites. Mix with a whisk
3- Pour into financier shaped molds and bake for 15 min at 350°F
Even better with brown butter!
